This coffee is produced by a network of local farmers that contribute their crops to the San Felipe processing station, family-owned and run by sisters Melisa and Jimena, the great-granddaughters of San Felipe's original owner. San Felipe was originally started as a coffee farm that produced only for the needs of its family members and local community, but it has transitioned to a processing station and experimental farm that works with crossing different varietals.

This coffee is really phenomenal and well-balanced in the cup. It is now the staple component of many of our house blends! The flavor transitions from a sweet grape note to vanilla bean and finally kettle corn on the finish.

  • WHAT IS DIRECT TRADE?

    Our green coffee is imported by De La Finca Coffee, who specializes in direct trade relationships. This means that they work directly with farmers to make sure farmers receive more money for their work. From De La Finca: "Through this supply chain model, we not only are able to empower and connect both farmers and roasters but we are also able to reinvest in local coffee growing communities through long-term school projects and initiatives, realizing our long-term vision for sustainable and independent communities."

  • ON ROASTING

    Since we invest in great greens, we focus our roasting energy on getting out of their way. Our small-batch, fluid-bed roaster allows us fine control over roast profiles in addition to yielding a squeaky clean cup. We categorize our coffees by light, medium, and dark roasts, but we really view these levels as cues for tasting notes rather than actually reflecting roast profile.
